Baghali polo is rice layered with broad beans and dill, fragrant and pale green. Served with mahicheh, slow-braised lamb shank, it is one of the grander dishes of the home kitchen and a frequent choice when guests are expected.
In spring it is made with fresh beans; the rest of the year, frozen broad beans, skinned, do the job well. It also appears on some Nowruz tables.

Tips from the kitchen
- Skinning the broad beans is tedious but worth it: the inner beans are brighter and more tender.
- Dried dill is perfectly acceptable here and is what many Iranian kitchens use out of season.
- Omit the lamb and serve with fried eggs or yoghurt for a vegetarian meal.
