Chelow is plain steamed rice made the Persian way: soaked, briefly boiled, drained and then steamed slowly so that the grains swell long and separate. It is the base for kababs and stews across Iran, and the method underlies every polo, or mixed rice.
Tahdig, literally the bottom of the pot, is the crust that forms beneath the steaming rice. It is the part people quietly compete for at the table, and a good one is considered a mark of a careful cook.

Tips from the kitchen
- Set the hot pan briefly in a few centimetres of cold water in the sink before turning out the tahdig; the shock helps it release.
- For variety, line the base with thin slices of potato or a round of lavash bread instead of the yoghurt rice.
- If you cannot find saffron, the rice is still good without it, but there is no real substitute for its colour and scent; turmeric is not the same.
