Zereshk polo pairs steamed rice with barberries, small red berries dried for their sharp, almost citrus sourness. A little butter and sugar takes the edge off, and the berries are spooned over saffron rice just before serving.
It is a fixture of family gatherings and celebrations, and the usual companion is chicken cooked gently in its own juices. Most of Iran's barberries are grown in South Khorasan, around Birjand and Qaen.

Tips from the kitchen
- Barberries scorch in seconds and turn bitter; keep the heat low and take them off as soon as they swell.
- Look for barberries in Middle Eastern grocers, often sold as zereshk. Store them in the freezer to keep their colour.
- There is no exact substitute. Finely chopped unsweetened dried cranberries with a squeeze of lemon give a similar look, though not the same sourness.
