Sabzi polo is rice steamed with a generous mix of fresh herbs, usually parsley, coriander, dill and chives or spring onion greens. Paired with fish, it is the dish many Iranian families serve for Nowruz, the New Year that falls at the spring equinox.
The greens are commonly read as a sign of spring and renewal. In the Caspian provinces the fish is often mahi sefid (Caspian kutum); elsewhere, and in the diaspora, any firm white fish works, and smoked fish is a popular alternative.

Tips from the kitchen
- Use rice flour for the fish if you need the dish to be gluten-free.
- If fresh herbs are scarce, about 30 g of dried sabzi polo herb mix can stand in, soaked for 10 minutes and squeezed; the flavour is flatter.
- Some families add a small amount of fenugreek or garlic greens; go lightly, as both are strong.
