Ash reshteh is a substantial soup of pulses, herbs, spinach and reshteh, flat salted noodles. It is finished at the table with kashk (fermented whey), crisp fried onion, garlic and mint sizzled in oil.
It is eaten around Nowruz, and many families make it on Chaharshanbe Suri, the last Tuesday night before the New Year. Eating noodles at this time is said to help one take hold of the threads of one's fortune for the coming year.

Tips from the kitchen
- Kashk is sold liquid in jars or dried in balls in Iranian shops. If you cannot find it, use thick Greek yoghurt or sour cream with a pinch of salt; the flavour will be milder and less savoury. Stir it in off the heat so it does not split.
- Linguine or fettuccine can replace reshteh; add a little more salt, as reshteh is pre-salted.
- Tinned chickpeas and beans (drained) can be used; add them with the lentils.
- Bloom the mint off the heat: it burns in seconds and turns bitter.
