Ash-e anar is a thick soup soured with pomegranate juice and molasses, with yellow split peas, rice and herbs, and usually small meatballs. Its colour runs from deep red to almost purple-brown.
It is a dish of autumn and winter, when pomegranates are in season, and it is one of the dishes some families serve around Yalda, the longest night of the year.

Tips from the kitchen
- Leave out the meatballs for a vegetarian soup.
- If you have no pomegranate juice, use 6 tbsp molasses thinned with an extra 500 ml water; check the sweetness carefully.
- Some cooks add a little beetroot for colour, or a handful of chopped beetroot leaves with the herbs.
