Sekanjabin is a syrup of sugar and vinegar infused with mint. Stirred into iced water with grated cucumber, it makes one of the classic Persian summer drinks, cooling and refreshing.

It is also served undiluted as a dip for crisp lettuce leaves, kahoo sekanjabin, a simple and much-loved summer snack. As a sharbat it is a common drink for breaking the fast in hot weather.

Tips from the kitchen

  • Do not boil the mint in the syrup; added off the heat it stays fresh-tasting.
  • Cider vinegar works but gives a fruitier flavour.
