Tea is the everyday drink of Iran, poured clear and amber into small glasses and offered to every guest. It is brewed strong in a pot set over a kettle or samovar, then diluted with hot water to each person's taste.
Nabat is crystallised sugar, often flavoured with saffron and sold on sticks; stirred into a glass of tea, it sweetens it gently. Many Iranians reach for chai nabat when someone has an upset stomach or a cold.

Tips from the kitchen
- Adjust strength by the ratio of brewed tea to hot water rather than by brewing time.
- Without nabat, serve plain sugar cubes, which are traditionally held between the teeth while sipping.
