Sholeh zard is a bright yellow pudding of rice simmered until it almost dissolves, sweetened and perfumed with saffron and rosewater. It is served cool, decorated with lines of cinnamon and slivers of almond and pistachio, often in patterns or lettering.
It is among the best-known dishes of nazri, food cooked in fulfilment of a vow and shared with neighbours, especially during Muharram, and it is also made in Ramadan and for family occasions.

Tips from the kitchen
- Pudding rice or Japanese short-grain rice work well outside Iran.
- For a vegan version, use a neutral oil in place of butter, or leave it out.
