Faloodeh is a frozen dessert with a long history in Iran: thin, chewy starch noodles suspended in a half-frozen rosewater syrup. The Shirazi version, from the capital of Fars, is the best known.

It is a summer treat, sold in ice-cream shops across the country and served with a squeeze of lime or a spoonful of sour cherry syrup, often alongside saffron ice cream.

Tips from the kitchen

  • If it freezes solid, leave it at room temperature for 10 minutes and scrape again with a fork.
  • Traditional faloodeh noodles are made from starch dough; very thin rice vermicelli is the usual home substitute.
