Gheymeh is a tomato-red khoresh of diced meat and yellow split peas, scented with dried lime and a little cinnamon, and finished with a heap of thin fried potatoes.

It is an everyday stew, but it is also one of the dishes most often cooked in large quantities as nazri, food given away in fulfilment of a vow, during the month of Muharram.

Tips from the kitchen

  • Cooking the split peas separately keeps them whole; added raw to the stew they can turn to mush or stay hard, depending on their age.
  • For gheymeh bademjan, top the stew with fried aubergine slices instead of, or as well as, potatoes.
