Khoresh bademjan is a summer favourite: lamb or beef simmered with tomato and turmeric, soured with dried lime or ghooreh (unripe grapes), and topped with long slices of fried aubergine that soak up the sauce.

It is eaten across Iran and is one of the stews most often made in home kitchens when aubergines are cheap and plentiful.

Tips from the kitchen

  • Ghooreh, unripe sour grapes, are sold frozen or in brine in Iranian shops. A handful can replace the dried limes; verjuice or lemon juice also works.
  • Baking the aubergines uses far less oil and gives a lighter stew.
