Salad shirazi takes its name from Shiraz, the capital of Fars province. It is nothing more than cucumber, tomato and onion cut small and dressed with sour juice and dried mint, but the fine dice and the sharp dressing make it the natural partner for rich rice dishes and kababs.

In Shiraz itself it is often dressed with verjuice (ab-ghooreh) rather than lemon, and some cooks use little or no oil.

Tips from the kitchen

  • Use small, thin-skinned cucumbers if you can; with a large English cucumber, scoop out the seedy core first.
  • Verjuice is sold in Iranian and Middle Eastern shops as ab-ghooreh.
