Adasi is a thick, simple dish of brown lentils cooked until soft with fried onion and turmeric. It is eaten for breakfast, particularly on cold mornings, and is sold by street vendors in winter.
It is served with warm bread to scoop it up, and often finished with lemon juice and a sprinkle of golpar, the ground seed of Persian hogweed.

Tips from the kitchen
- Golpar is sold in Iranian shops, sometimes labelled angelica powder; it has a distinctive, slightly bitter aroma. Leave it out rather than substitute.
- Season only after the lentils are soft; salting early can keep them firm.
- A knob of butter stirred in at the end is traditional in some homes, but omit it to keep the dish vegan.
